Bia Rebel is Northern Ireland's only ramen shop. They take inspiration from this incredible Japanese dish, but give it a distinctly local twist. They make their own noodles, mix their own salts and dressings and source all of the meat from small-scale, traditional local farmers. The end result is wholesome and delicious Irish fusion, at burger chain prices, on the go!
Everything starts with the soil. Bia Rebel's ramen is the composite of many parts, but they can all be traced back to the earth that nourished the plants that fed the animals that in turn, feed us.
Chef Brian Donnelly was inspired by Tokyo's ramen culture, and by the similarities between traditional Japanese ingredients and traditional Irish ones: seaweed, fish, pork and mushrooms, so he looked for a good local noodle supplier, and not finding one anywhere in the UK or Ireland, decided to make his own.
Bia Rebel believes high-quality food should be available to all, and Northern Ireland is blessed with some of the best pasture, meat and eggs in the world. Through a network of small farmers, they buy the most flavourful and healthiest ingredients direct from the farm.

Chef Brian Donnelly grew up in Co. Tyrone where he spent summers working on his grandparents' farm, drinking raw milk, churning butter and cutting turf. This early influence drives Bia Rebel's small-scale ethos.
